Stomach Flu +chicken soup

Last week I have experienced something I do not wish anyone to go through. I had full blown stomach flu and still haven’t fully recovered. The worst part of dealing with such infection is exhaustion and general decline in the wellbeing… I just lied in my bed tired, worn out, sad and depressed and wasn’t able to do anything. At least I caught up on some watching some movies and took a well-deserved break from work… Unfortunately I am one of these people who keep thinking and working nonstop so I guess Universe sent me a message it is time to chill out… At least I am trying to find some positive in the fact that was so sick!

But what helped me this week to recover was homemade chicken soup… which soothed my upset stomach and provided my body with the best nutrients… Benefits of chicken soup are countless and proven ….

I personally know it is the best remedy to recover from colds, flus, stomach upsets and general exhaustion.

I am still weak but recovering! I know there are tons of recipes for chicken soup but here is how I cook mine… Stay healthy, strong and happy!!

Margo’s chicken soup

Ingredients

  • 1 3-4 punds chicken
  • 6 carrots peeled
  • 1 parsnip
  • 1 leek
  • 4 celery stalks
  • 2 1/2 teaspoons kosher salt
  • 5 potatoes
  • 5 garlic cloves
  • 1 onion

Directions

  1. Place the chicken in a large pot and boil for about 30-40 minutes until cooked. In the meantime prepare veggies: peel and cut potatoes, parsnip, carrots, celery stalks, leek into 1-inch pieces. Quarter the onion. Once chicken is tender and cooked, transfer it to a bowl, separate bones from meat. Throw out bones and shred the meat. Add the cut vegetables with cooked meat to the broth and cook for another 25-30 minutes until all veggies are fully cooked. Season with salt and pepper. Enjoy hot!!!!!
